What can you make out of these mangoes for dinner?


Mango is my favorite fruit. I buy mine at Ranch 99 because they are cheaper than most places.
It comes in a box (not sold individually), and over time,  
I lose my appetite for it when eaten almost daily.
So if you are a ripe mango addict like me, but wish you can it eat differently, the good news is,
 instead of wasting mangoes by letting it rot, you can actually eat it in many many ways.

Tonight, I chose to make a Mango and Red Cabbage Slaw.


I shredded a head of red cabbage




Sliced and diced ripe mangoes



Added lime, cider vinegar, sugar, 
and with the help of my assistant, fresh cilantro leaves, my favorite.




Easy Mango and Red Cabbage Slaw



Ingredients

  • 1 head red cabbage, halved and very finely shredded (about 8 cups)
  • 1 teaspoon salt
  • 1 large or 2 small ripe mangoes, peeled, fruit sliced from the pit, and diced
  • 1 tablespoon chopped fresh cilantro leaves
  • 1/4 cup lime juice (about 2 limes)
  • 1 tablespoon cider vinegar
  • 1 tablespoon granulated sugar

Directions

Place the cabbage in a large bowl and toss it with the salt, using your hands to press down firmly on the cabbage to encourage the cabbage to release some of its moisture and better absorb the salt. Transfer the cabbage to a colander and let it sit for 20 minutes to drain.
Using paper towels or a kitchen towel, squeeze as much liquid as possible from the cabbage and place it in a clean, large bowl. Toss with the mangoes, cilantro, lime juice, vinegar and sugar. Let it sit at room temperature for 15 minutes before serving.

A treat that will make you smile for under $4

As an adult, ice cream is a dessert that I love but eat occasionally, because it's so loaded with sugar.
Last week is an example of those occasional times, because it was sooo hot in San Jose.
This one came in a container that did not scream 'yummy', but because I like watermelon, got it for $4.
Oh. my. Gosh. 


It is dangerously delicious.
1.65 L of pink sherbet and chocolate goodness.
It's watermelon flavored, but 100 times more delicious than the fruit.


Maybe I can make a chocolate pudding cake so I can use the rest as a topping.
Yes, I should do that.

2 Little helpful hands and flapjacks= Happiness

On sunday morning, I woke up to: "Mommy! It's a bright and beautiful day! Wake up!" :) And then....
"Can we please make chocolate chip flapjacks, mommy?".
I replied with one eye closed, "Okay, let's go make it". She smiles and hugs me and then says,
"Yesssss! I will make it with you and you eat some too, okay?"

So funny how very excited she was about  adding the chocolate chips in the pancake. While I was getting ready in the bathroom,  she climbs on top of the counter to get the chocolate chips from the cupboard. Then when I went to the kitchen, she shows me the measuring cups placed near the stove and says,  "Here, it is ready, now, let's start cooking".







She did not like it as much as the usual fluffy ones that I make her,
good thing I made more of the plain ones.


"See mommy, I knew you'd love it"

I thought that was really thoughtful and super cute!

"Thank you, dear. I enjoyed the flapjacks very much" :)

What a way to start the day.

 We had one sweet sunday breakfast. ('~')




Here is a good pancake recipe for children allergic to egg whites:

1cup milk
2 tablespoons white vinegar
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg yolk
2 tablespoons butter, melted
cooking spray


Directions
  • Combine flour with white vinegar and milk, mix it well, then add the rest of the ingredients. Whisk until all lumps are gone.
  • Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.



Life is not perfect all the time, but you have to find ways 
to keep you going, to feel good about, to create your happiness.
